The following whole food recipes are principally vegetarian, although ingredients can always be added or
substituted to make them vegan, or even non-vegetarian. (See below for information on customizing these
and other recipes to suit your needs).

Apple Cider Vinegar
Pour Apple juice into large glass jars, leaving the top 1/4 section of the jars empty. Cover with sheet material or
a few layers of cheesecloth and seal lids with string or rubber bands. Wait about 4-6 months (depending on how strong
you want the flavor to be) for juice to ferment. Finally, siphon off the scum from the top layer and store in a dark
colored glass jar or jars with lids or corks in a cool dark place (this is the "Mother", which can be used to make
vinegar later, but much faster). The remaining fermented juice is the apple cider vinegar; store in glass jars or bottles.
