The following whole food recipes are principally vegetarian, although ingredients can always be added or
substituted to make them vegan, or even non-vegetarian. (See
pantry basics for information
on customizing these and other recipes to suit your needs).

Tacos & Taco Salad
4C veggie burger (or hamburger)
2C cooked beans (optional)
1/4C diced onions (optional)
1/4C taco seasoning
2tbsp water
Grated cheese
Sliced tomatoes
Chopped lettuce
Salsa and sour cream
Cook and crumble veggie burger (or hamburger) in a greased pan until well browned. Stir in beans,
onions, taco seasoning
and water. Cook 10-15 minutes, stirring frequently, then remove from heat (this is the taco filling).
For Hard Shell Tacos: fill taco shells
with a few spoonfuls of taco filling, then top with lettuce, tomatoes, salsa, cheese and sour cream.
For Soft Shell Tacos: lightly fry both sides of flour tortillas in oil and remove from heat. Fill tortillas with
a few spoonfuls of taco filling, then top with lettuce, tomatoes, salsa, cheese and sour cream; roll, closing one end of each
tortilla and serve.
For Taco Salad: Deep fry flour tortillas until crispy and golden brown, using a taco salad bowl fryer basket to hold
it down and form the shape of the taco salad shells. Drain off oil and fill taco shells with a layer of taco filling, then chopped
lettuce, tomatoes, sliced olives and grated cheese. Drizzle French dressing over top, then top with another layer of taco filling,
more lettuce, tomatoes, sliced olives, grated cheese and French dressing.
