The following whole food recipes are principally vegetarian, although ingredients can always be added or
substituted to make them vegan, or even non-vegetarian. (See
pantry basics for information
on customizing these and other recipes to suit your needs).

Cilantro Salsa
1 diced onion
4 chopped tomatoes
1/2C fresh chopped cilantro
1/4C diced green chilies
2tbsp diced jalapenos
2 minced garlic cloves
2tbsp vinegar
1tbsp lemon or lime juice
1tbsp oil
1/2tsp sea salt
1/4tsp powdered ginger
Soak onions, chilies, jalapenos and garlic in vinegar at room temperature for 20 minutes. Drain and combine with
remaining ingredients in a blender, then blend until at desired consistency; refrigerate overnight before serving.
