The following whole food recipes are principally vegetarian, although ingredients can always be added or
substituted to make them vegan, or even non-vegetarian. (See
pantry basics for information
on customizing these and other recipes to suit your needs).

Spanish Rice
2C rice
1C water
1/4C salsa
2tbsp butter
4C tomato sauce
1/2 chopped onion
5 minced garlic cloves
1 diced bell pepper
3 diced green onions
1/2tsp Sea Salt
1/2tsp lemon juice
1tsp chili powder, cumin, paprika and honey (each)
Saute rice, garlic and onion in butter until rice begins turning brown, and onions are clear (about 5-10
minutes). Add remaining ingredients, then cover and bring to a boil. Reduce heat to low and simmer 45-60
minutes (or until rice has absorbed most of the liquid), stirring frequently; remove from heat.
