The following whole food recipes are principally vegetarian, although ingredients can always be added or substituted to make them vegan, or even non-vegetarian. (See pantry basics for information on customizing these and other recipes to suit your needs).

Stuffed Bell Peppers
Cut bell peppers in half lengthwise, remove seeds and bake at 350F for about 15 minutes. Remove from the oven and fill each halved bell pepper with Spanish rice, then place as many stuffed peppers as will fit into a baking dish, sprinkle grated cheddar cheese over top each one and bake another 10-15 minutes. (Peppers should be easy to chew and cheese should be melted).
