The following whole food recipes are principally vegetarian, although ingredients can always be added or substituted to make them vegan, or even non-vegetarian. (See pantry basics for information on customizing these and other recipes to suit your needs).

Spinach Lasagna
12 lasagna noodles
3C veggie burger (optional)
3C grated cheddar cheese
3C grated mozzarella cheese
2C cottage cheese
1 chopped onion
3 cloves minced garlic
2C chopped spinach
1 1/2C tomato sauce
1tsp oregano
1/2tsp sea salt
1/2tsp parsley
1/2tsp basil
1/4tsp pepper

Saute veggie burger, onions and garlic in oil; set aside. Bring a large pot of lightly salted water to a boil, add lasagna noodles and cook 8-10 minutes or until al dente; drain. For lasagna mixture combine tomato sauce, oregano, sea salt, parsley, basil, pepper and sauteed veggie burger mixture in another large pot; bring to a simmer, stirring constantly; remove from heat. In the bottom of a greased casserole dish, spread a layer of lasagna mixture; top with a layer of lasagna noodles, then another layer of lasagna mixture, some cottage cheese, spinach, cheddar and mozzarella cheeses. Repeat layering until there are a few layers of noodles or more and all is in the casserole dish. Bake at 350 degrees for 35-40 minutes, or until cheese is lightly browned on top.
