Spinach Lasagna
12 lasagna noodles
3C veggie burger (optional)
3C grated cheddar cheese
3C grated mozzarella cheese
2C cottage cheese
1 chopped onion
3 cloves minced garlic
2C chopped spinach
1 1/2C tomato sauce
1tsp oregano
1/2tsp sea salt
1/2tsp parsley
1/2tsp basil
1/4tsp pepper
Saute veggie burger, onions and garlic in oil; set aside. Bring a large pot of lightly salted water to a boil, add
lasagna noodles and cook 8-10 minutes or until al dente; drain. For lasagna mixture combine tomato sauce, oregano, sea
salt, parsley, basil, pepper and sauteed veggie burger mixture in another large pot; bring to a simmer, stirring constantly;
remove from heat. In the bottom of a greased casserole dish, spread a layer of lasagna mixture; top with a layer of lasagna
noodles, then another layer of lasagna mixture, some cottage cheese, spinach, cheddar and mozzarella cheeses. Repeat layering
until there are a few layers of noodles or more and all is in the casserole dish. Bake at 350 degrees for 35-40 minutes, or
until cheese is lightly browned on top.
* May use hamburger instead of veggie burger
