Recipes

The following whole food recipes are principally vegetarian, although ingredients can always be added or substituted to make them vegan, or even non-vegetarian. (See pantry basics for information on customizing these and other recipes to suit your needs).

Salt Rising Bread
flour
5C water
2C milk (at room temperature)
3 sliced medium potatoes
3tbsp cornmeal
2tbsp melted butter
1tsp honey
1 1/2tsp sea salt
1/2tsp calcium carbonate powder

Combine potatoes, cornmeal, honey, 1tsp sea salt and 4C water in a large pot and bring to a boil; transfer to a large ceramic bowl, then wrap the bowl in a heavy cloth, cover and let sit in a warm place overnight. Remove potatoes and add milk, butter, calcium carbonate powder, remaining water and sea salt. Add enough flour to make a stiff dough and knead until smooth and elastic, then form into loaves and place in greased bread pans; cover and let double in size. Bake at 400F for 45 minutes or until golden brown on top and a toothpick stuck through the middle comes out clean.


For Biscuits: roll dough out flat (about 1/2" thick) on a floured surface, cut out circle shaped biscuits with a cup or cookie cutter and bake on cookie sheets for only 10-15 minutes or until golden brown

For Burger Buns: roll dough into balls, place on cookie sheets and flatten slightly; sprinkle sesame seeds over top (optional) and bake 20-30 minutes or until golden brown; let cool and cut in half for top and bottom buns

For Dinner Rolls: roll dough into balls and put in muffin pans; brush tops with melted butter before baking

For French Bread: roll dough into one loaf shaped like French bread before baking

For Garlic Bread: make garlic butter by mixing together 1/2C butter, 1/2tsp garlic powder and 1/4tsp basil; slice a loaf of French bread in half lengthwise, then spread garlic butter over the inside of each half and broil on low heat for 10-15 minutes or just until buttered sides of bread is crispy

For Hoagie Rolls: roll dough into two long loafs in the shape of hoagie rolls (half the size of French bread), and sprinkle tops with sesame seeds before baking

For Spicy Italian Cheese Bread: mix 1C grated cheddar cheese, 1/4-1/2C diced jalapenos and 1/2tsp garlic powder in with dough; roll dough into one long loaf in the shape of French bread; sprinkle oregano, thyme, basil and grated cheese over top before baking

For Texas Toast: use equal parts corn flour and all-purpose flour to make dough; after baking and allowing to cool, slice bread thick, butter both sides of each slice and bake until crispy
