The following whole food recipes are principally vegetarian, although ingredients can always be added or substituted to make them vegan, or even non-vegetarian. (See pantry basics for information on customizing these and other recipes to suit your needs).

Peach or Apricot Nectar
1/2C sugar
1C boiling water
4C ripe, pitted peaches or apricots

Chop fruit, combine with water in a saucepan and cook until soft. Strain out skins and most of the pulp, then return to the saucepan. Bring to a simmer, add sugar and stir until dissolved; remove from heat and refrigerate overnight before serving.
