The following whole food recipes are principally vegetarian, although ingredients can always be added or substituted to make them vegan, or even non-vegetarian. (See pantry basics for information on customizing these and other recipes to suit your needs).

Marinated Mushrooms
1/2C oil
2tbsp vinegar
2C mushrooms
2tbsp lemon juice
1 minced garlic clove
1/2tsp brown sugar
1tsp sea salt
1tsp thyme

Wash mushrooms and cut larger ones in half. Stir together all ingredients in a large bowl and refrigerate overnight; drain before serving.
