Recipes

The following whole food recipes are principally vegetarian, although ingredients can always be added or substituted to make them vegan, or even non-vegetarian. (See below for information on customizing these and other recipes to suit your needs).

Non-Dairy Ice Cream
2C non-dairy milk
1C plain non-dairy yogurt
1/3C sugar or substitute
2tsp vanilla extract

Combine ingredients (along with any other ingredients desired for different flavors) in a blender and puree. Pour into an ice cream maker and prepare as directed by manufacturer's instructions.


For Butter Pecan Flavor: replace 1/2C yogurt with vanilla pudding, use brown sugar or substitute instead of white sugar or substitute, add 1/3C toasted, chopped pecans and 2tbsp butter. Melt butter in a saucepan over medium heat, then cook just until it begins to brown, stirring constantly. Add brown sugar, heat and stir until it melts, then add milk and stir until sugar is dissolved (do not allow to boil). Mix in yogurt, vanilla pudding, pecans and vanilla extract; refrigerate overnight before preparing in an ice cream maker.

For Chocolate Flavor: add 1/4C cocoa (or carob) powder

For Fruit Flavor: add 1/4C chosen fresh fruit or berries

For Peppermint Candy Flavor: add a few drops of peppermint extract and 1/4C peppermint candy canes (chopped small)

For Rocky Road Flavor: add 1/2C mini marshmallows, 1/4C cocoa or carob powder and 1/4C chopped almonds
