The following whole food recipes are principally vegetarian, although ingredients can always be added or
substituted to make them vegan, or even non-vegetarian. (See
pantry basics for information
on customizing these and other recipes to suit your needs).

Veggie Fajitas
2 green bell peppers
2 orange bell peppers
1 sliced white onion
1C sliced mushrooms
2 chopped green onions
2 minced garlic cloves
fajita mix and oil
chopped tomatoes
chopped lettuce
flour tortillas
grated cheese
sour cream and salsa
Saute garlic in equal parts fajita mix
and oil for about 2 minutes; add peppers and saute another 2 minutes, add white onions and saute another 2 minutes, then
add mushrooms and green onions, saute another 3-5 minutes, remove from heat and set aside (this is the fajita filling).
Fry each tortilla separately in oil until slightly browned on both sides and spoon some fajita filling on each; top with
cheese and salsa, then roll and cover one end of each tortilla. Top with lettuce, tomatoes and sour cream.
