The following whole food recipes are principally vegetarian, although ingredients can always be added or
substituted to make them vegan, or even non-vegetarian. (See
pantry basics for information
on customizing these and other recipes to suit your needs).

Bean & Cheese Enchiladas
corn or flour tortillas
6C enchilada sauce
4 1/2C bean & cheese burrito filling
4C grated cheddar cheese
1C sliced olives
1/2 diced onion
sour cream and salsa
Heat both sides of tortillas in oil over medium heat, then dip in
enchilada sauce and lay flat in a
casserole dish. Spoon some bean and cheese burrito filling,
sour cream and salsa onto each tortilla, then roll and fold over tortilla ends. Place as many enchiladas as possible in a casserole dish and
pour 2C of enchilada sauce over top. Cover with a layer of grated cheese, diced onion and sliced olives, then bake at 350 degrees for 20-30
minutes. Remove from heat and serve with a couple of spoonfuls of remaining enchilada sauce over top.
* Note: cooked, chopped or shredded chicken or steak may also be added to the filling (optional)
