The following whole food recipes are principally vegetarian, although ingredients can always be added or substituted to make them vegan, or even non-vegetarian. (See pantry basics for information on customizing these and other recipes to suit your needs).

Chocolate Eclairs
Mix one part whipped cream with four parts chocolate pudding and set aside. Place bread dough (from salt rising bread recipe) in a pastry bag without a tip. Squeeze out strips of dough (each about 4" long by 2" wide) on a greased cookie sheet and bake 30 minutes or until golden brown; let cool. Put pudding mixture in a pastry bag with a 1/2" round tip, then squeeze about 1/4C filling into each eclair through one end. Top eclairs with powdered sugar, melted chocolate or butterscotch chips (with or without slivered almonds).


For Vanilla Flavored Eclairs: use vanilla pudding instead of chocolate pudding

For Banana Flavored Eclairs: use banana pudding instead of chocolate pudding
