Recipes

The following whole food recipes are principally vegetarian, although ingredients can always be added or substituted to make them vegan, or even non-vegetarian. (See pantry basics for information on customizing these and other recipes to suit your needs).

Cabbage Soup
3C veggie stock
1 1/2C tomato juice
1/2C chopped cabbage
1/4C fresh minced parsley
4 cloves minced garlic
2 chopped onions
1 diced potato
1tbsp vinegar
2tsp soy sauce
1tsp dill seed
1/2tsp caraway seed

Saute cabbage, onions, dill and caraway seeds in oil 5 minutes or until cabbage and onions are clear, stirring occasionally. Add garlic and vinegar, then saute for another minute or two. Add stock, tomato juice, potatoes and soy sauce, cover and simmer 15-20 minutes or until potatoes are tender; add parsley and remove from heat.
