The following whole food recipes are principally vegetarian, although ingredients can always be added or substituted to make them vegan, or even non-vegetarian. (See pantry basics for information on customizing these and other recipes to suit your needs).

Bean and Rice Pilaf
2C rice, cooked in veggie stock
2C beans, cooked in veggie stock
2 diced red bell peppers
2 cloves minced garlic
1 stalk diced celery
1 chopped onion
1 chopped tomato
1/2tsp thyme
2tbsp vinegar
1tbsp oil

Saute peppers, garlic, celery, onions and thyme in oil 5 minutes. Add rice, beans, tomato and vinegar, then saute another 5 minutes and remove from heat.
