Recipes

The following whole food recipes are principally vegetarian, although ingredients can always be added or substituted to make them vegan, or even non-vegetarian. (See pantry basics for information on customizing these and other recipes to suit your needs).

Broccoli Cheese Casserole
2C chopped, steamed broccoli
1 1/2C cooked brown or wild rice
1/2C fresh mushrooms, sliced
1/2C grated cheddar cheese
1/2C cottage cheese
1/2C Alfredo Sauce
1/4C milk
1-2tsp sea salt
1/2tsp pepper

Combine and stir together all ingredients in a greased baking dish and bake at 350 degrees for 20-30 minutes.


For Green Bean Casserole: use green beans instead of broccoli, reduce rice to 1C and add 1/2C cubed potatoes (steamed or boiled)
